Preparation of eco-friendly alginate-based Pickering stabilizers using a dual ultrasonic nebulizer spray method

Abstract Pickering emulsions based on biologically oriented compounds are highly appreciated in a variety of applications, such as food, cosmetics, and pharmaceuticals. Here, we develop the dual ultrasonic nebulizer spray method to efficiently produce alginate particles (APs) that can be used as eco-friendly and biocompatible Pickering stabilizers. This custom-designed method enables one-step preparation of chitosan-coated APs (CAPs) and direct encapsulation of magnetic nanoparticles within CAPs. The size of the resulting CAPs is about 5 μm in diameter, which is ideal for emulsion stabilizers. Unlike conventional APs production based on nozzle spraying, the developed method does not cause clogging problems, allowing large-scale production of APs-based Pickering stabilizers with a narrow size distribution. In addition, various CAPs-stabilized Pickering emulsions are demonstrated to be extremely stable against coalescence and drying upon exposure to air.
