Electrodynamic Processes as an Effective Solution of Food Industry Problems

Abstract

The technologies of a directed energy action proposed by the authors as a new research area were studied, and the results are presented in this paper. The tools for implementing these technologies are electrodynamic generators, which are capable of addressed energy delivery to the target points in the volume of raw materials, including the nanoscale ones. It is shown that some problems of the food industry can be effectively solved conforming the structure of food raw materials and the parameters of electrodynamic action on the product. The electrodynamic devices and the field of their use in production are classified. The conventional and electrodynamic technologies of raw material processing are compared. It is established that the electrodynamic extractors enhance the mass transfer process by a factor of 10–100 and produce a better product than traditional ones. The electrodynamic evaporators remove moisture almost to the solid phase, and the dryers significantly reduce the process time and energy costs. The electrodynamic apparatuses have good prospects for use in chemical, drug, biotechnological, and other industries.
