The fact that the British – ‘nothing if not gustatory chauvinists’ (p. 15) – were persuaded to move away from the ‘roast beef of Old England’, Woods shows, was caught up in the reality and rhetoric of the ‘native’ breeds that created a world after Britain’s meat-eating image. The Herds Shot Round the World is an accomplished, important and compelling study that marshals its wide-ranging archival research on breeding practice and discourse in order to plot the cultural, ecological and (geo-)political as well as economic forces that shaped the growth of British meat markets. The fact that these markets laid ‘the foundations of a globalizing industrial apparatus for meatmaking [. . .] whose legacy supplies the tables of the developed world today’ (p. 22) only goes to underline just how valuable the work should prove to scholars from different disciplines with an interest in Animal Studies, Eco-Criticism and environmental and imperial history. Even if the cattle and sheep at the centre of this book did not captivate the Victorians in quite the way pets and exotic animals did, Woods suggests that we ignore their significance at our peril.
