Lexan is a registered trademark for SABIC Innovative Plastics’ (formerly General Electric Plastics) brand of a thermoplastic polycarbonate. Lexan is the brand name for polycarbonate sheet and resin in a wide range of grades. Lexan is mainly used in three domains: building (glazing and domes), industry (machine protection and fabricated parts) and communication and signage. Common usages include space and sports helmets, clear high-performance windshields and aircraft canopies, motor vehicle headlight lenses, and bullet-resistant windows. Lexan is also used to produce varying sizes of food storage containers and is highly prized in the industry as a durable and non-flavor transmitting material. It is often clear and very hard. (Business Wire, March 27, 20031) The first controlling image applied to African-American women is that of the mammy— the faithful, obedient domestic servant. Created to justify the economic exploitation of house slaves and sustained to explain Black women’s long-standing restriction to domestic service, the mammy image represents the normative yardstick used to evaluate all Black women’s behavior. By loving, nurturing, and caring for her white children and “family” better than her own, the mammy symbolizes the dominant group’s perception of the ideal Black female relationship to elite whitemale power. Even though shemay be well loved and may wield considerable authority in her white “family,” the mammy still knows her “place” as obedient servant. She has accepted her subordination. ( Collins 72–73) Black women are not absent from the archive of U.S. culinary production, particularly its folktales, ephemera, and material culture. The prominent placement of commercial figures such as the Quaker Oats Company’s Aunt Jemima illustrates that visibility is not the central problem in the excavation of the relationship between Black women and U.S. food histories. Rather the distorted representations of Black women in Lost Cause—inspired cookbooks, live-action cooking demonstrations atWorld’s Fairs, and the advertisements of the post-Reconstruction era have formed forceful and lasting impressions in the thinking that surrounds Black women and food. These portrayals of Black women as naturally and joyfully servile, unfit for freedom, and deeply dependent on whites for their sense of self are embedded in national food culture and still resonate in contemporary popular culture. (Chatelain 32) The Minnie Jackson Character epitomizes the sassy Black cook who shoots off her mouth, wisecracks, has a lot of folk knowledge, is often pleasantly plump, and knows her way around the frying pan. This imagery is carefully crafted, welcomed, and rewarded within a white dominated media, both historically and contemporarily. If as many scholars have argued, these “controlling images” have material consequences in the lives of Black women in general, whatmay be the specific implications for Blackwomenwho cook professionally? In what ways are Black female culinary professionals and culinary personalities operating
