Extraction and Properties of Black Rice Pigment

Two black rice pigment components, BR1 and BR2, were obtained by thin layer chromatography. From five experiments for in vitro testing of the scavenging ability, anti-lipid peroxidation (anti-LPO) ability, and reducing ability of active oxygen (●OH, O 2 – ●, H 2 O 2 ) radicals, it can be seen that the two components have different degrees of antioxidant ability, the radical scavenging has a dose-effect relationship with the sample concentration, and the reducing ability of the two components is relatively weaker than that of ascorbic acid at the same concentration.
