Recent trends on the valorization of winemaking industry wastes

Wine production is an activity of high global economic impact, and generates considerable amount of wastes leading to severe problems in ecosystems. In order to lower the impact of these wastes, alternative uses need to be proposed. Winery wastes are rich in phytochemicals with great opportunities for utilization given their chemical structure and biological properties. In the last two years, intense research has been carried out aiming to generate novel alternatives to characterize, purify, or apply phytochemicals. As a result, new technologies have arisen in two ways of valorization: novel methods of extraction and the utilization of the wastes or its compounds, either purified or as bulk in different fields ranging from animal and human nutrition to new nanotechnological applications. In this review, the recent trends toward novel alternatives for winemaking industry waste utilization are discussed.
