Industrial applications of enzymes

Enzymatic reactions are performed under mild conditions of temperature and pressure, in non-toxic solvents and exhibit very high rates and are often highly specific. Due to very mild performing conditions of biocatalytic approaches, they can be operated by naive tools and are facile to control. Their ability to be soluble and active in both aqueous and non-aqueous solvents, are another properties of these biocatalyst cause to use them in the industrial, pharmaceutical, and agricultural usages. For example, these biocatalysts can be used widely in various industries such as food (starch conversion, dairy products, baking), beverage (fruit and vegetable juices, wine, beer) processing, biosensors, textile industries, animal feed, detergents, pulp and paper, nutrition and health care, waste water treatment, chemical, pharmaceutical and cosmetics products, and biofuels such as biodiesel and also the number of other applications continue to increase. In the current review, we discuss the industrial applications of enzymes.
