Family characteristics: Lipases/acyltransferases catalyze acyl transfer preferentially over hydrolysis if a suitable nucleophile is present, even in a medium with a high thermodynamic activity of water. Mutations are used to investigate structural effects and reveal that the most efficient lipase/acyltransferase exhibits the largest and most hydrophobic nucleophile pocket.
