Abstract

The distribution of a substance between two immiscible phases: a water–dimethylsulfoxide solvent of variable composition and n-hexane is studied. The obtained data are used to determine the distribution coefficients of hydroxypropyl-β-cyclodextrin and to calculate the changes in the Gibbs energy of resolvation. Weakening of the solvation of the macrocycle is observed upon moving from water to aqueous solutions of dimethylsulfoxide. Based on an analysis of the obtained and literature data, it is assumed that changes in the state of solvation of cyclodextrins have the main effect on the change in the stability of complexes of quercetin with hydroxypropyl-β-cyclodextrin and with β-cyclodextrin in water–dimethylsulfoxide solvent.
