Abstract The spin-probe method is applied to estimate the rate and degree of sorption of water vapor by gelatin-based polymers. The rate and the sorption degree of gelatins are shown to be affected by the extent that they are crosslinked. Cross-linked gelatin swells in water vapor at 300 K for a time period that is thrice as long as the time for which native gelatin swells in the same conditions.
