ABSTRACT Milk is a staple food of huge nutritional and national importance, consumed by almost everyone in some form every day. The sheer quantity of milk being processed daily for drinking, for making into butter and cheese and related products, is huge. Perhaps it is the essential ‘everyday’ nature of the industry that contributes to the fact that it is not, and probably never has been, firmly rooted in the public consciousness. It is this paradox — universal knowledge and use of a product and an ignorance of how it is made — that this article seeks to address, through description, following field recording and documentary research, of the four original purpose-built creameries in Wales established by the former Milk Marketing Board, including where possible an historical perspective, an architectural description and an account of the processes. Three of the creameries are still in existence: one currently derelict and two in dairy-related use, but the fourth, now demolished, has proved somewhat enigmatic.
